Chickpea Galettes

Ingredients

  • 1 1/4 cups plain Greek yoghurt
  • 6 scallions, sliced thin
  • 1/4 cup minced fresh cilantro
  • 2 (15 oz) cans chickpeas, rinsed
  • 2 large eggs
  • 6 tablespoons olive oil
  • 1 teaspoon garam masala
  • 1/8 teaspoon cayenne pepper
  • 1 cup panko bread crumbs
  • 1 shallot, minced

Preparation

  • Pulse chickpeas coarsely in food processor with shallot, garam masala, cayenne, and cilantro.
  • Combine in large bowl with eggs, 2 tbsp oil, yoghurt, pinch of salt, scallions, and bread crumbs.
  • Form mixture into patties/cutlets/galettes and fry in pan with oil at medium heat.
  • Patties are done when well browned on each side.
  • Serve with yoghurt like sauce-- tzatziki is a good option.
